Ingredients

  • 1 9-inch double-crust pie crust
  • 5 cups gooseberries, currants, blackberries, raspberries, cut up strawberries, blueberries, huckleberries, or loganberries
  • 1 1/2 tablespoon fresh lemon juice
  • 2/3 to 1 cup sugar, or more to taste
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1 to 2 tablespoons unsalted butter, cut into small pieces

1Step 1

  • Pick and hull as necessary:
    • 5 cups gooseberries, currants, blackberries, raspberries, cut-up strawberries, blueberries, huckleberries, or loganberries
    • add 1 1/2 tablespoons fresh lemon juice

2Step 2

Combine:

  • 2/3 to 1 cup sugar, or more to taste
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon

If the fruit is juicy, add:

  • 1 tablespoon quick-cooing tapioca

  • Sprinkle this mixture over the berries and stir gently until well blended.
  • Let sit for 15 minutes.

  • Meanwhile, preheat the oven to 450 degrees Fahrenheit
  • Turn the fruit into the pie shell. Dot with:
    • 1 to 2 tablespoons unsalte4d butter, cut into small pieces

5Step 5

  • Cover the pie with a well-pricked or vented top or with a lattice
  • Bake for 10 minutes
  • Reduce the heat to 350 degrees Fahrenheit and bake for 35 to 40 minutes, or until golden brown
  • Cool completely on a rack
