Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup hot water
  • 1/2 cup unsulfured molasses
  • 1/2 cup honey
  • 1/2 cup (1 stick) unsalted butter
  • 1 large egg
  • 1/2 cup sugar

1Step 1

  • Preheat oven to 350 degrees
  • Grease and flour 9-inch square baking pan or line the bottom with wax or parchment paper

  • Whisk together thoroughly:
    • 2 1/4 cups all-purpose flour
    • 1 1/2 teaspoons baking soda
    • 1 teaspoon ground ginger
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon salt

  • Whisk together in a small bowl:
    • 1 cup hot water
    • 1/2 cup unsulfured molasses
    • 1/2 cup honey

  • Whisk together in a large bowl
    • 1/2 cup (1 stick) unsalted butter, melted and cooled
    • 1 large egg
    • 1/2 cup sugar

5Step 5

  • Add the dry and liquid ingredients alternately to the butter mixture, whisking well after each addition
  • Add, if desired, 3 tablespoons finely chopped crystallized ginger

6Step 6

  • Pour the batter into the prepared pan. Bake until a toothpick inserted into the center comes out clean, about 1 hour.
  • Let the cake cool in the pan on a rack.
