- Preheat oven to 350 degrees
- Grease and flour 9-inch square baking pan or line the bottom with wax or parchment paper

- Whisk together thoroughly:
- 2 1/4 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt

- Whisk together in a small bowl:
- 1 cup hot water
- 1/2 cup unsulfured molasses
- 1/2 cup honey

- Whisk together in a large bowl
- 1/2 cup (1 stick) unsalted butter, melted and cooled
- 1 large egg
- 1/2 cup sugar

- Add the dry and liquid ingredients alternately to the butter mixture, whisking well after each addition
- Add, if desired, 3 tablespoons finely chopped crystallized ginger

- Pour the batter into the prepared pan. Bake until a toothpick inserted into the center comes out clean, about 1 hour.
- Let the cake cool in the pan on a rack.
