- In a sauce pan start on medium heat and begin sweating out the carrot, celery, and onion until the veggies are soft and the onion is slightly translucent.
- Add in the ham and peas and stir lightly
- Add in butter and incorporate well with the filling

- When the butter has melted sift in the 1/3 cup flour and combine until the roux is a light blonde
- Once the flour smell has dissipated stir in the heavy cream or milk and add in your herbs
- Cook on a low simmer until the desired thickness remove from heat and chill
3Step 3
- Preheat oven to 375 degrees Fahrenheit
- Separate the pastry dough into ten equal size parts and lightly flour surface
- Once the desired thickness of the dough is reached fill 1/4 of the dough with the filling and fold other side over into a half-moon shape
- Crimp the rounded side using a fork to press down along the edge to seal
4Step 4
- Lay pies out on a half sheet tray and lightly beat the egg in a bowl until homogenous and then brush each of the pies lightly with the beaten egg
- Bake pies for 12 minutes or until golden brown depending on your oven
