Prepared the marinade. Stir together olive oil, lemon zest, lemon juice, rosemary, garlic, salt, and pepper in a medium bowl.

Cut chicken breasts crosswise into 8 strips each. Cover with the marinade and refrigerate for 1-2 hours.
If using wooden skewers, soak them in water for 1 hour.

Prepare a medium-grill fire or preheat the broiler. Thread the chicken onto 16 skewers.
Grill or broil until just cooked through, about 2 minutes per side. Serve hot or at room temperature.
