Combine the sugar, salt, and pumpkin pie spice in a bowl. Heat the butter in a large pan over medium heat. Add the pumpkin seeds and stir to coat. Sprinkle the sugar mixture over the seeds and stir until coated. Gently stir until sugar caramelizes and seeds reach the toastiness you prefer. Remove from heat and allow to cool before serving. Store in an airtight container at room temperature.
