Mashed Potato Gnocchi

Ingredients

  • 2 lbs mashed potato
  • 8 oz all-purpose flour
  • 2 whole eggs
  • 2 tablespoons butter
  • Thyme
  • Cranberry sauce

1Step 1

  • Begin by putting a large stockpot on the stove with water that’s just slightly salty to taste and bring to a boil.

2Step 2

  • In a bowl combine all ingredients by hand until a smooth dough has been formed
  • Roll out the dough into thin 1 1/2-inch strips and cut to desired size and length

3Step 3

  • In small batches, boil the gnocchi until set in the middle and tender
  • Usually around 1 minute or until the pasta floats to the top

4Step 4

  • Preheat your skillet with a light amount of oil, sear gnocchi for thirty seconds on one side, flip and repeat

5Step 5

  • Once searing both sides of the gnocchi is complete, take two tablespoons of butter and let melt down in the pan
  • Once browned take off the heat
  • Garnish with thyme and warmed cranberry sauce to finish
